Gluten Free Paella Recipe

gluten free paellaI love paella and I was happy to realise that I could still make one of my favourite recipes without making many modifications to it.

My original paella recipe was gluten free apart from the oxo chicken stock cube, which of course can be replaced with a knorr stock cube since they are gluten free. Or if you have plenty time on your hand you can always make your stock from scratch.

If you don’t like any of the ingredients below you can simply swap them for whatever you prefer e.g. swap the chicken for more seafood, or skip the chorizo

 

Gluten Free Paella – Ingredients (serves 2-3):

  • 2 chicken thighs
  • 1 cooking chorizo sausage sliced (most chorizo is gluten free, but double check to be sure)
  • 1 small onion (chopped)
  • handful of mushrooms (sliced)
  • 1 red pepper (chopped)
  • 2 Tomatoes (chopped)
  • 200g paella rice
  • handful of peas (frozen or fresh)
  • 100g of prawns (+ mussels and squid if you like)
  • splash of white wine (optional)
  • 500ml chicken stock (knor stockcubes are gluten free)
  • Garlic clove
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of Turmeric
  • A few threads of saffron (optional)

Gluten Free Paella – Method:

Fry the chicken thighs in a small amount of olive oil until sealed and remove the skin if you want to be healthy. Fill the pot with 1 pint of chicken stock and leave to simmer for at least 30 minutes. This ensures that the chicken thigh is thoroughly cooked and will also give the stock a better flavour. If you wish you can also add a few threads of saffron to the stock.

Fry the onions, chorizo and garlic in some olive oil for a few minutes and then add the mushrooms, tomatoes and pepper until softened (this will take about 5 minutes or so in total).

Add the paella rice and a splash of white wine, then add enough stock to cover the rice. Stir in the turmeric and the paprika and then add the chicken.

It should take around 20 minutes or so to cook the rice, so keep an eye on it, adding more stock when necessary. A few minutes before serving add the prawns and the peas until they are piping hot and then serve with wedges of lemon.

This is not a strict traditional paella (especially since I make it in a wok, lol), but it is very tasty.
